B & E Burritos is a family-owned and operated New Mexican restaurant proudly serving the Hatch, New Mexico community for over 47 years. Founded by Willie and Esther Villegas, the business began as a dream shared between Blanca and Esther Villegas—represented by the “B & E.” When Blanca pursued other ventures, Willie and Esther carried forward the name and vision, opening the doors to what would become a local favorite.

Our Story
With assistance from local banker Darwin Rooker, the Villegas family purchased a small vacant lot from Ula Carter and two years later began constructing the building that still stands proudly today—forty-seven years later. What began as a modest café-style New Mexican eatery was built from the ground up through dedication, family collaboration, and community support.
Family played a vital role in the development of B & E Burritos. Angie and Valentino Carbajal contributed countless hours assisting with brickwork, tile, and finishing details, while local carpenter Mr. Tarin provided expertise in masonry and concrete construction. Together, their combined efforts transformed an empty lot into a thriving local business.
Although the Villegas family began without a formal business plan, their motivation was clear—to work hard, provide for their children, and create an opportunity to be self-sustaining. Over time, that simple goal evolved into a longstanding family enterprise built on quality, authenticity, and a strong work ethic.

At B & E Burritos, we take pride in supporting our community and honoring our agricultural roots. We purchase locally whenever possible—sourcing beans from Morrow Farms, onions from local growers, and cultivating our own Hatch green chile. These fresh ingredients form the heart of our menu and the foundation of our authentic New Mexican flavors.

Locally Sourced
Our homegrown green chile is transformed into our signature spicy green chile con carne. Sun-dried red chile pods are carefully processed into a smooth and flavorful red chile sauce, and our handpicked jalapeños become a savory hot salsa—each dish made in-house with care, tradition, and the bold taste of New Mexico.
We take pride in offering meals that everyone can enjoy—from the traditional New Mexican food lover to those who prefer vegetarian or gluten-free options.
